I made Irish Soda Bread yesterday from one of the packages that was a gift from our driver in Ireland, Sharon.
It is delicious. My husband just came from having a bite of it and was astounded at the heartiness of the bread. He thought it was a Wow!
I smiled.
It is chewy, filled with bran, fiber, walnuts, raisins, and dried cherries. I put a little bit of “Earth Balance” on it and heat it up slightly and then add some local honey and it is delicious.

I love the fiber in it. It feels super healthy and reminds me of Ireland.
We have to remember the best things from times past.
Our ancestors had skills and tools that can help us last.
If they could build stone castles and walls that still stand.
Then we could learn something from how they worked the land.
We make the mistake that humanity is so much smarter now.
But how many of us know how to work land with a plow?
When we study the history of our ancestors,
Even the ones in the grass shelters.
We discover that they had learned to listen to the land.
After all, they looked ahead and planned.
They did not think that life would be a free ride.
But they also knew how to play and take things in stride.
